LAZIPE: No mayo, egg & avocado salad
(makes 2 sandwiches)
- 2 hard boiled eggs
- 1/2 of ripe avocado
- 1 celery rod finely chopped
- Splash of lemon juice
- Touch of chopped cilantro
- Handful of diced tomatoes
Mix everything in a bowl and eat.
I had this last night in a toasted pita but you could put on top of a bed of greens as well. SUPER EASY, just how I like it.
This looks SO good.
